The lovely Vanessa from Superfoods For Kidz is such a great recipe creator! She has kindly let me share her yummy Christmas Blast Balls recipe with you all! These are perfect if you need to take a plate or to keep the kids happy with something yummy but really good for them! Enjoy.
Christmas Blast Balls
Vital Stats: nut free, dairy free, gluten free, egg free
Okay, so this is what you need:
3 – 4 Cups Dessicated Coconut
¾ Cup Coconut Cream
¼ Cup Cranberries, chopped
3 tablespoons Rice Malt Syrup
3 Tablespoons C Berry Blast
1 ½ teaspoons Vanilla Bean Paste
100g 70% Dark Chocolate
Okay, so this is what you do:
Add all ingredients (except chocolate) to a large bowl and mix till well combined and all ingredients are stirred through.
Press teaspoons of mixture into balls and roll slightly if needed.
Melt the chocolate and add small teaspoons of the melted chocolate on the top of the balls.
Place in the fridge for at least an hour to set and then enjoy !
