I know I am a bit slow on the uptake but…… I finally got around to making the famous “2 ingredient” biscuits that are all over the internet!
I thought I would road-test them for any of you who haven’t tried them out yet. Anyone? Anyone?
So, what’s the verdict? Yes, they really are easy and yes, they do taste yummy and yes, it does work just fine!
Just 2 ingredients are required, but you can then add in whatever other ingredients you like to jazz them up. I had a play around with a few ingredients and quantities and this is my version of the famous biccy.
2 Ingredient Biscuits
Vital Stats: wheat free, dairy free, nut free, egg free, can be gluten free
Okay, so this is what you need:
2 medium sized ripe bananas
1 cup organic rolled oats
optional – your choice of add ins
HOT TIP: I never use quick oats as they have a higher GI than regular oats!
Okay, so this is how you do it:
Preheat the oven to 180Β°celsius and line a biscuit tray with non-toxic baking paper.
Mash the bananas and then add the oats. That’s it! Easy, huh?
You can also make them in the thermomix – whizz banana on speed 5 for 10 seconds. Add oats and mix on reverse, speed 5 for 10 seconds or until combined.
Shape into walnut sized balls with your hands or a teaspoon. Flatten down slightly.
Bake for around 15 minutes or until the biscuits firm up.
I got 15 small biscuits from this mixture.
Store in the fridge or freezer in an airtight container.
There you have it – 2 ingredient biscuits!
HOT TIP! Make a double batch and freeze for school lunches!
Jazz up your biccy!
While my daughter liked the plain biscuit, the rest of us thought the jazzed up ones were nicer.
Let your imagination go wild and add in whatever you like!
The three I did were:
Chocolate:Β cacao powder and cacao nibs
Superfood: goji berries and chia seeds
Fruit ‘n Spice: grated apple, sultanas and cinnamon
I think they at least need some vanilla or cinnamon in them for a little flavour. If your kids have a really sweet tooth, you may need to add in a little raw honey or maple syrup.

Yep we’ve made them. School is a no nut no chocolate school (they even frown on cocao *rolls eyes*).
We add vanilla, cranberries and sultanas usually
Our schools don’t have a nut policy, so we are lucky! I think cranberries would be awesome in this! π

I add plain yoghurt to mine, ginger and cinnamon and any different combo of dried fruit. Sultanas and cranberries my favourite

I have recently found your blog and it is definitely inspiring me to cook more from scratch for the little people.
So ahem… as a new baker, I have a silly question..
How do you store them in the freezer, do you need wrap them in glad wrap or alfoil first, or can I just pop them altogether in a freezer safe container? & next question, how long could I leave them in the freezer for? I am getting getting organised this year to have more home made & much less store bought treats & snacks.

HI Renee – It depends on what you want to use! You can wrap in alfoil or glad wrap first. I use baking paper and then into an air-tight container. You can put them all together in a container, but they make stick together and make it hard to get out just one portion. They are usually good in the freezer for up to two months.

We’ve been making these a while and the family favourite is a little cinnamon, a little vanilla and…. chocolate chips – of course!!

Are these crunchy, soft and crumbly or chewy? I have 4 over ripe bananas to use up and was curious as the the texture of these?

Well, I just added a teaspoon at a time until it looks right! Sorry I can’t be more specific! But in a whole batch I would probably add about 1/4 to 1/2 cup of add ins like fruit, nuts etc
wow delicious, I put a cup of muesli in instead as it had raisins, apricots, papaya and cranberry in already so made it so simple and easy, add some desiccated coconut as I love coconut and a tsp vanilla. I didn’t think id like it as I don’t like banana’s. but I loved it, if im in a rush a couple of these would do for a quick breakfast on the go and for kiddies pack lunches. def making these again. did I mention I love them.

Just waiting for the oven to heat up! I can’t remember what I put in mine… um – it was 1/2 oats, 1/2 meusli, choc chips, flaxseeds, chia, dried apricot, pepitas, superfoods (c berry blast, vital veggie, berry choc chunk), and possibly something else, but I don’t know! Miss 3 isn’t keen on it, but we’ll see!
