Chocolate and nuts are a match made in heaven.
Treat yourself and your loved ones this year with this yummy recipe – it’s really quick and easy to make.
I made these last year and distributed them as gifts as well as keeping some for ourselves. They don’t last long in my house. I have the current batch well hidden!
The recipe is originally from Super Healthy Kids, a really great American site featuring some fantastic ideas for fun kid’s food!
I have changed it a little to make it healthier and thermified it.
Healthy Chocolate Coated Nuts
Vital stats: Dairy-free, gluten-free, grain free, vegetarian
Okay, so this is what you need:
500g organic mixed, raw nuts (or nuts of your choice)
1 organic, free range egg white
1 vanilla pod, scraped or 1 teaspoon vanilla extract
2 tablespoons organic, raw cacao (not cocoa)
1/2 cup organic coconut sugar
Okay, so this is how you do it:
Preheat the oven to 120 degrees celsius.
Fling the egg white into your thermy with the butterfly and no MC. On temperature 50 and speed 4, whizz for about 3-5 minutes.
Chuck in the sugar, cacao and vanilla and whizz again. Speed 4, 10 seconds, scrape down and redo if you need to. Take out the butterfly.
Whack in the nuts to mix. Reverse, speed 1, 10 seconds. I am repeating reverse, because if you don’t hit reverse, you will have crushed nuts!! 😀
Spread them out in a single layer onto a large baking paper-lined tray.
Bung in the oven and slow roast, for about one hour. Stir every fifteen minutes.
Cool right down and store in an airtight jar.

Top Tips.
*Make a double batch – you are going to need them!
*Hide from the kids.
*Don’t package them in cellophane or plastic bags for gifts! Be eco-friendly and recycle a glass jar with a pretty ribbon. The op-shop usually has really pretty jars if you don’t have any.
*Last year when I made them, they kept for weeks in a sealed jar.
*They aren’t overly sweet or overly chocolatey but they are overly moreish.
Okay, that’s it – super easy, super healthy and super yummy!

oh raw nuts – thanks Jen, I knew I forgot to tell you something… will fix that up !! the problem with ‘roasted’ in that often they deep fry them in some sort of dodgy vege oil so I avoid those! 🙂
I thought so but best to check. I only have natural nuts so was hoping I wouldn’t need to get roasted to replicate this recipe. Thank you!!!

Sorry to be dim but what do you mean by mc? I do have a thermomix but am a very new owner.
HI Anne-Marie – sorry I meant the measuring cup (or the little plastic thing that goes in the top of the lid). I just go by the recipe in the EDC for whipping up egg whites. Are you enjoying your thermy?

Where can I get coconut sugar from? Haven’t heard of it before. What else can it be substituted with (incase I have it in my cupboard & can make these now without going out in this heat!) thanks!
Just the health food store or organicsonabudget.com.au . Rapadura or xylitol or sugar will work. 🙂

I made several large batches of these last year for gifts, put them in mason jars with ribbon. I ate every single nut before they were received. THis year I am refusing to make these, they are too delicious and tempting!

Oh my! I was feeling bored this arvo and thought I’d give these a try. I didn’t have vanilla so I added some cinnamon instead and they are delicious! I’m not generally a big fan of nuts but these I could eat. A LOT! 😀
I know!! I can’t stop eating them when I make them…… so good – I will remember the cinnamon option. I tried to make a vanilla, cinnamon, maple version but they went too sticky!
I’ve just made these again this year and discovered to my chagrin that you can’t add more cocoa to make up the chocolateyness of cacao and do a double batch at the same time. They taste divine (almonds, macadamias, cashews, sunflower seeds and pecans) but they were mixed nut chocolate clusters going into the oven. Still, I guess it means you can get more in your mouth at a time easier. A tried and true Christmas favourite.
Hi, I made this with a mix of raw nuts I picked up from my local nut shop. What I found was that the mix didn’t stick as well to the brazil nuts as it did to the smaller nuts, and would recommend to others to use nuts of similar sizes, or the macro brand that you have used. I used rapadura, which I am finding a little overpowering, and would recommend people add a touch of cinnamon, or some extra cacao to mitigate this. Anyone making this in a hotmixpro, follow the recipe as is (though would encourage making a double mix so the egg white doesn’t cook on the sides of your bowl), and simply mix for 5 seconds on speed 1F once you have added the nuts.
Unfortunately there were too many nuts for the jar I had, so I had to eat quite a few…..such a shame 😀
Thanks for the advice Kathryn! I did use rapadura last year, but I find the coconut sugar is much nicer. My brazil nuts don’t coat as well either, but I leave them in because I love them so much!!!

Hi, Just wondering if anyone has managed to make this egg free? My 9 month old has anaphalaxis and i’m trying to get used to cooking egg free…. any ideas?

Love the descriptions ‘fling’ ‘bung’ but I think you missed one? Maybe throw them on a tray instead of spread?
