My gorgeous daughter has done it again.
She has a love affair with chocolate and created these babies, inspired by a recipe at Elana’s pantry.
They are sooooo good! Lovely and moist with lots of chocolatey flavour.
You can ice them with whatever you like, but they really don’t need it.
DID YOU KNOW? coconut flour has the highest amount of dietary fibre than any other flour!
Healthy Chocolate Muffins
Vital Stats: grain free, gluten free, nut free, naturally sweetened
So this is what you need:
1/2 cup coconut flour
1/2 cup organic cacao powder
1/2 teaspoon good quality salt
1 teaspoon bicarb soda
6 organic eggs
1/2 cup macadamia or coconut oil (should not be solid)
1 cup honey or sweetener of your choice
So this is how you do it:
Preheat oven to 190Β° celsius.
Line a 12 cup muffin tray with baking papers. (I like using the If You Care range – there are no toxins!)
Put the dry ingredients in the thermomix and whizz on speed 5 for 10 seconds.
Add the wet ingredients and whizz on speed 4 for 10 seconds until just combined.
Chuck into the muffin papers and cook in the oven for about 25 minutes or until cooked through.
Don’t let the mixture sit too long, the coconut flour doesn’t like it and you will end up with dry, tough muffins.
Non thermomix instructions: Β Mix dry ingredients in one bowl and wet ingredients in the other. Combine gently.

Bet they are great but we can’t have eggs. So many awesome recipes use them. I can generally substitute with chia gel but not sure substituting 6 would work…
Yes, unfortunately coconut flour needs a lot of eggs to get a good texture usually.
How far would you recommend filling the muffin cases? Do they rise much the same as more traditional muffins would? Thanks so much π

Due to egg and coconut allergies I made these recently substituting the egg with 1 1/2 cups apple puree and replacing the coconut flour with rice flour and used Macadamia oil. They were sensational!

I have made these so many times and they are great! Can’t get enough of them. I reduced eggs to 4 and used almond milk to top up for the other 2 eggs and it was just as good. Thank you for this great recipe.

Sorry Sonia, I didn’t measure. I just poured what may have looked like about the same amount of liquid as 2 eggs. SORRY! Not good with these things which is why I follow talented people like you!
Yummmm. My toddler approved too! I added fruit puree (apple & pear) and less sweetener. Worked well.

This recipe is fantastic. I only use 3/4 C of honey and they are more than sweet enough. Our 3 yr old looooves them! Thanks for a great recipe, it is hard to find coconut flour recipes that aren’t “eggy”

No idea what I did wrong here but my muffins have ended up gelatinous at the bottom. I’ve always thought myself good at baking but since I’ve been using ‘non-traditional’ ingredients it hasn’t been working so well for me! Perhaps I should have melted the coconut oil before adding?
Yes! Coconut oil in cooking is generally in the melted form. I will adjust the recipe to say so! π
