Make your own gluten free brekky cereal

 

I think I have a crush on Julie Maree Wood. I buy her books, I make her recipes, I stalk her Facebook pages, I like her posts, I tell everyone about her. 

“Julie Maree Wood is a naturopath and nutritionist (a food nerd). She teaches and writes on the topic, runs a clinic in Sydney and is the nutritionist for the Sydney Kings’ basketball team. She is the author of Feeding Fussy Kids, 60-Second Secrets,  The Complete Food Makeover and The 4 week Energy Diet.”

Flicking through my copy of Feeding Fussy Kids, I came across Julie’s recipe for Three-Bubble Crunch. Hellooooo, breakfast just got a whole lot more interesting! I’m sorry Julie, but I had to tweak it – I am a cereal serial tweaker! So, this is my version of Julie’s recipe. I call mine…..

 

Puffy Coconut Cereal!

 Vital Stats: egg free, nut free, gluten free

Okay, so this is what you need:

1 1/3 cups puffed brown rice

1 1/3 cups puffed corn

1 1/3 cups puffed millet

1/2 cup shredded organic coconut

2 tablespoons virgin organic coconut oil

2 tablespoons organic apple juice concentrate

3 teaspoons of cinnamon

Abundant Earth make fantastic puffed cereals with nothing artificial added. Find them in the health food aisle of major supermarkets.

 

Okay, so this is how you do it:

Line a large baking tray or two with baking paper. Set oven to 150°C.

Mix everything together thoroughly in a large bowl.

Spread onto the trays, making sure you have it all in one layer.

Bake for about 10 minutes, depending on your oven. It should be nice and golden brown and crunchy. It will get even crunchier as it cools. Be careful not to burn it though!

Cool it right down and then store it in an airtight container. Serve it with some organic milk for brekky or just as a snack on its own! You could also top it with a dried fruit, nut and seed mix.

      Sushi- technically I know it’s more than one food but wasabi and raw fish are something I just cannot stand….although I can handle it if there is no wasabi, and it uses smoked salmon or cooked fish or prawns.

      I’m not particularly fussy – I’ll eat pretty much anything. My 3 year old on the other hand… has very strong ideas on what he will and will not eat!

    I am fussy about okra! It is just wrong, wrong, wrong! If I wanted to eat clag, I would! Don’t like durian either, but I think most people are the same lol

    I really don’t like celery(even though I know I should).. and I know I should continue eating salads during winter, but I just can’t.. I love something warm in my tummy and crave all the nasty stuff 😉

    I’m quite fussy with eating meat that isn’t grass fed and certified organic. When I’m eating conventional meat- I picture big fat overweight cows that are sick from eating grains in my mind. I know, pretty silly! but when I became aware of the conditions cows are brought up in and what they eat, it makes me quite ill thinking that its far from the way things should be naturally.

      me too OOAB… I have found organic pork and chicken lately and using organic beef from the supermarket… about to order a huge side of lamb and beef from a supplier I hunted down out west…. I just can’t bring myself to eat meat that has been treated badly and stressed… it makes me feel ill too !

    I’m fussy about allergens! It’s life or death here plus gf for the coeliac so we don’t really have time to be fussy about food for other reasons. Although…I hate cauliflower 🙂

    I am not actually a fussy eater myself, I will try anything – but as for the rest of my family….!!! Kids are ‘allergic’ to fruit apparently (so they tell people!), my youngest will live on a diet of plain cruskits and pasta with nothing on it if I let him!

    Honestly?! I’ll eat anything! But as with a recent celiac’s diagnosis, wheat is my new kryptonite! 🙂 Looking forward to trying this recipe and would not mind trying to make some muesli bars with it too!! We shall see! AND would love to win the book! 🙂

    Actually, I’m not too fussy about much and luckily neither are my boys, aged 3.5 and 18 months, and Mr 5 months is loving his rice cereal so much I think he’ll take after his two big brothers. So perhaps ‘Feeding Fussy Kids’ isn’t really needed in this household… but my husband is a deadset shocker (the list of what he WILL eat is much shorter than the list of what he won’t eat!) so if I won this great book, I would seriously have to get a permanent marker out and change the title to ‘Feeding Fussy HUSBANDS!!!!’

    I’m not too fussy and I always like to try new things, which is more than I can say for my kids and husband! But I just can’t bring myself to eat paw paw, which oddly enough they all love!!!

    I’m fussy about steak. Mince I will eat, stir fry beef strips if in a pinch but steak, yuk! Our dinner growing up was steak, potatoes (alternated with pumpkin) and beans (alternated with peas) most nights….went vegetarian for a decade at the end of my teens, any wonder?

    Hi! I’m fussy with fish. I don’t like fishy fish lol ( strong flavoured fish). My boys go through different journeys with food but overall very good healthy eaters. 🙂

    I’m not too fussy about most things – so long as I don’t have to eat large quantities of them – but never been a big fan of anything that you have to gnaw off of a bone.

    I am fussy about dairy and wheat it upsets the poor tum. I also try to find recipes and experiment with recipes so I don’t have to use refined sugar. 🙂

    I’m fussy about passionfruit! Crazy I know. As a child, I once had a migrane after I ate some, so I associate passionfruit with that…. I’m sure it’s all in my head! My son loves passionfruit!

    The one food I really just can’t eat is carrot! Which everyone things is absurd as I am a vegetarian. Ever since I was a child, carrots and I have not got along! 😉

    I’m not fussy, nor is my husband, but my 3 yr old daughter is driving me mad with her fussiness at the moment. Apparently I wasn’t that great at eating when I was little and I just want to say “sorry Mum” I now feel your pain. She won’t eat ANY greens at the moment unless it is completely hidden. Did I mention she is DRIVNG ME MAD!!

    It’s unfortunate but I have a complete aversion to all fruit except bananas. It’s something that started as a child and I cannot bring myself to eat it. Lucky I love my vegies.

    I have to be fussy for my daughter. For her health she has to be on a strict Gluten Free diet. I have added your Gluten Free Brekky cereal to my repertoire. It is fortunate that I am more than happy to make from scratch. I think it has made us all eat much healthier.

    I guess that means I am fussy about over-processed.

    Really glad to have stumbled across your blog! I’m not really fussy about any particular food but i do try to be fussy about how healthful the food we eat is, thankfully my kids are pretty good about what they eat but having some extra ideas about sneaking in some of the ‘superfoods’ and new recipes to try would be great. 🙂

    I’m fussy about pumpkin, can eat it as soup but not roasted. Love your blog, i have a almost 7 year old who has eaten just about anything all his life, since the end of January he has gotten very fussy, i’m starting to struggle with what to put in his school lunches so he actually eats something.

    I can’t stand tomato! and thats in any form, YUCK! can’t get my kids to eat it either, banana is another one, hate even touching it, only will for the kids! Best thing is they aren’t that fussy, except are allergic so diet is slightly restricted!

    I’m not particular fussy, but I have a 3 1/2 yo who has decided to pick and choose what will go into his mouth. He went from loving veg to refusing any and all of it! I’ve had to resort to hiding them which I don’t like to do and using veggie powder when I can’t hide. At the same time, I have a 5 1/2 yo who is turning into a vegan. One eats ONLY meat and the other eats ONLY veggies. I’m now struggling to get them to eat a balanced diet.

    Hello! I will eat most everything (although a few comments above have put me off trying durian and okra!!), but I am really fussy about where it comes from or how it is treated. My kids on the other hand can be major fuss pots!

    I’m fussy about how things are cooked or made – like the colour of my toast and the way my tea is made. My daughter is currently very fussy about a lot of things and my son is basically eating the opposite of what she will eat! Arg!

    Hi – I was wondering if you have followed the work of Sally Fallon, the Weston-Price Foundation and others like Dr Catherine Shanahan? They all discuss the toxicity of puffed grains and extruded cereals, and this was also written about in “Fighting the Food Giants” by Paul Stitt. Some people haven’t been made aware of this knowledge of how toxic even “healthy” foods can be – just thought I would pass it on 🙂
