2 Ingredient Biscuits

January 14, 2014 · 37 Comments

I know I am a bit slow on the uptake but…… I finally got around to making the famous “2 ingredient” biscuits that are all over the internet!

I thought I would road-test them for any of you who haven’t tried them out yet. Anyone? Anyone?

So, what’s the verdict? Yes, they really are easy and yes, they do taste yummy and yes, it does work just fine!

Just 2 ingredients are required, but you can then add in whatever other ingredients you like to jazz them up. I had a play around with a few ingredients and quantities and this is my version of the famous biccy.

2 Ingredient Biscuits

Vital Stats: wheat free, dairy free, nut free, egg free, can be gluten free

Okay, so this is what you need:

2 medium sized ripe bananas

1 cup organic rolled oats

optional – your choice of add ins

HOT TIP: I never use quick oats as they have a higher GI than regular oats!

Okay, so this is how you do it:

Preheat the oven to 180°celsius and line a biscuit tray with non-toxic baking paper.

Mash the bananas and then add the oats. That’s it! Easy, huh?

You can also make them in the thermomix – whizz banana on speed 5 for 10 seconds. Add oats and mix on reverse, speed 5 for 10 seconds or until combined.

Shape into walnut sized balls with your hands or a teaspoon. Flatten down slightly.

Bake for around 15 minutes or until the biscuits firm up.

I got 15 small biscuits from this mixture.

Store in the fridge or freezer in an airtight container.

There you have it – 2 ingredient biscuits!

HOT TIP! Make a double batch and freeze for school lunches!

Jazz up your biccy!

While my daughter liked the plain biscuit, the rest of us thought the jazzed up ones were nicer.

Let your imagination go wild and add in whatever you like!

The three I did were:

Chocolate: cacao powder and cacao nibs

Superfood: goji berries and chia seeds

Fruit ‘n Spice: grated apple, sultanas and cinnamon

I think they at least need some vanilla or cinnamon in them for a little flavour. If your kids have a really sweet tooth, you may need to add in a little raw honey or maple syrup.

Here are some more ideas for the add ins:

* shredded coconut, dried fruits, seeds, nuts, spices, vanilla, superfood powders, grated vegetables or fruits

This is a fantastic recipe to start the kids on learning to cook. It’s so easy and they can have fun making their own combinations up.

I would love to know if you have made these and what your add ins are. Please share!

HOT TIP! These are perfect for a grab and go breakfast!

Your guide to a Happy, Healthy Easter !

Your guide to a Happy, Healthy Easter !

It’s an early Easter this year! Are you ready?

This pagan celebration has somehow turned into a giant choc-fest! I also think it’s outrageous that hot cross buns appear on Boxing Day. More and more catalogues and shops are suggesting that Easter is another Christmas and we should buy gifts as well as copious amounts of chemical-laden chocolate.

It is easy for kids to get caught up the hype.

Okay, so how do you participate in Easter, enjoy some chocolate and not be a party-pooper? Well, it’s easy. Just go back to basics – home made is best or choose your products wisely. Create family traditions based around making treats together on the Easter weekend. We ask family and friends to not buy chocolate for our kids. We all just get one small portion of chocolate each. That is really enough and we all enjoy it!

Here are some more healthy ideas and alternatives for you.

Healthy Fig, Cinnamon and Pecan Biccies

August 6, 2012 · 26 Comments

gluten-free, egg-free, dairy-free, vegetarian and thermomix friendly

Sometimes out of adversity, comes miracles. Well, okay, I am being overly dramatic here. But once you taste these little morsels you might well agree with me.

The Natural New Age Girl found a recipe she wanted to make for gluten-free biscuits. Unfortunately, we only had one ingredient on the list. So, we decided to invent, create and throw some random things together and see if it would work!

What we ended up with were these chewy, fudgy, yummy biccies. I had to hide some for photos before they were all demolished!

Safe to say our experiment turned out well.

They are gluten-free, egg-free, dairy-free, vegetarian and thermomix friendly. And healthy. Make a double batch.

Just to be sure you get one.

Healthy Fig, Cinnamon and Pecan Biccies

Okay so this is what you need:

1 1/2 cups organic almond meal

1/2 teaspoon bicarbonate of soda

1 tablespoon organic cinnamon

2 tablespoons organic Australian olive oil (or coconut oil or macadamia oil)

4 tablespoons organic apple juice concentrate  (or honey or maple syrup)

1/4 cup finely chopped organic dried figs

1/4 cup finely chopped pecans

Okay, so this is how you do it:

Fling the almond meal, bicarb, cinnamon, pecans and figs into a bowl. Mix it up well.

Fling into another bowl the oil and apple juice concentrate and mix well.

Mix the stuff from the two bowls together.

Roll into small balls and chuck onto a baking paper lined tray. Press them down a little. Leave a good gap, because they spread out.

Whack into the oven – 160 degrees celsius for about 20 minutes.

Cool on a wire rack. Makes about 12.

Thermomix Instructions:

Make your almond meal by milling on speed 9 for about 10 seconds. Add dry ingredients and mix well on reverse, speed 4 for 10 seconds.

Add wet ingredients and mix again on reverse, speed 4 for 10 seconds.

Note: Mix it up and use cacao, coconut and goji berries instead of the fig and pecan!

Enjoy.

Five Favourite Things – July

July 30, 2012 · 8 Comments

July. Winter. Snuggling. Comfort food. Hibernating. Trying to find the sun.

Here are some things that I have been in love with this month. ♥

Wendy Blume’s amazing “Breakfast on the go biscuits” recipe from the Vegie Smugglers 2 cookbook. This recipe has two ingredients – cereal and egg white (I don’t use the sugar). It is super quick and easy to make and it doubles as a great kid’s snacks or breakfast in the car for those mental mornings! I use Freedom Foods Ancient Grains Super Muesli gluten-free cereal and organic eggs. Seriously yummy.

Be Gorgeous rosehip oil from Naturlea. Rosehip oil has become my new best friend. It is nature’s best kept beauty secret! I have been using rosehip oil for some time and then got the opportunity to try this brand after winning it in a Facebook competition!  I adore it. Jacqui from Naturlea  has combined beautiful rose geranium essential oil with the organic rosehip oil so it smells heavenly (and not earthy like plain rosehip oil).  Rosehip oil is good for promoting collagen, reducing scarring and stretch marks, fighting skin ageing, lightening pigmentation and rehydrating. If you are over 30, you need to get into this stuff – it has made my skin glow!

Natural Calm Drink. The lovely ladies at Natural Vitality sent me some of this to try out. It is a great way to make sure you are getting enough magnesium and calcium in your diet, in the right combination. Did you know that magnesium deficiency can cause stress, fatigue, insomnia, anxiousness, irritability, muscle cramps, headaches, PMS and hormonal imbalance? I pretty much had all of those things! Together with taking regular epsom salts baths, my symptoms have eased right off. If you think you might be magnesium deficient, get it checked out with your medical practitioner or naturopath!

Kundalini Yoga Fire Breath. We have been doing lots of the fire breath in my yoga class. It feels a bit weird to do at first, but I love how it makes me feel. It is so energizing and really gets your blood pumping with all the extra oxygen. Some of the benefits include releasing anxiety, nervousness and emotions, flushing toxins out of the blood stream, massaging internal organs and expanding your lung capacity! It’s a great remedy for those mid-afternoon energy slumps. Don’t do the fire breath if you are pregnant or menstruating though! See how to do it here.  Give it a go and tell me what you think.

My husband (aka Natural New Age Dad). I actually love him every month of the year! However, this month we have been really focusing on our relationship. Life, kids, work and ill-health can all get in the way of making our marriage a priority. We have had some hiccups. As our kids head into teen years though, we find things are changing. We finally have more time for ourselves, my son is old enough to babysit his sister and we have been hanging out together a lot! Date nights, yoga classes, romantic walks, dinner, movies, holding hands ….. it’s been blissful. I feel like I am falling in love with my husband all over again. I highly recommend it. ♥

So, that is my favourite five, what are some things you have been loving this month?
