Princess Pikelets

Today on the website, I am thrilled to be able to share a healthy pikelets recipe with you from the lovely Amy Crawford, health and wellness practitioner and founder of the online wellness hub The Holistic Ingredient.

 

Princess Pikelets

Vital Stats: gluten free, dairy free, nut free

Makes 40 small pikelets.

You’ll Need:

1 ½ cups buckwheat flour

1 cup tapioca flour

2 tablespoons coconut flour

2/3 cup milk of choice (coconut milk, almond milk, rice milk etc)

3 tablespoons raw honey

2 teaspoons baking powder

2 eggs

1 teaspoon apple cider vinegar

Pinch sea salt

Coconut oil for frying

Method:

In a large mixing bowl whisk the eggs. Sieve the flours into the bowl and add all remaining ingredients. Stir to combine, ensuring no lumps in the batter.

Heat a frying pan over medium heat and melt 1 teaspoon coconut oil. Spoon dessertspoons of the mixture into the pan. Cook for 1 minute or until bubbles form. Flip and cook for less than a minute or until golden. Repeat with the remaining batter, adding more coconut oil as required.

Eat warm with Jammy Raspberry Goo or store in an airtight container for 5 days.

 

Jammy Raspberry Goo:

You’ll Need

1 ½ cups raspberries, fresh or frozen

1/4 cup water

3 tablespoons chia seeds

3 tablespoons rice malt syrup

Seeds of one vanilla pod

Method:

Combine all the ingredients in a bowl and stir well. Use a fork to mash up the raspberries. Cover and place in the fridge for a minimum of one hour or overnight. Store the jam in a sterilised airtight container in the fridge for up to 10 days. Spread between pikelets.

How to host an eco-friendly kids’ party!

Today I am bringing you my top tips for a very green kids’ party. Keep in mind that even the little things we do can all make a difference.

 

♥ Plan ahead. Many environmentally friendly products are sadly not widely available, so you may need to hunt around or order online.

♥ Make a list and consider what you will need. From here you can work out how you can make the party greener. Borrow from friends, consider using things you already own or things that can be re-used, composted, recycled or upcycled in anyway.

♥ Invitations can be made at home with recycled paper or cards or you can use some eco-friendly invitations.

♥ Skip the paper invites and email the guests or create a Facebook event!

♥ You need to be very careful with balloons. If you want to have them, please dispose of them properly as they pose a choking risk to animals (even the biodegradable latex ones).

♥  Tell your guests that your party is eco-friendly and ask them to join in the fun. You could ask them to wrap the gift in recycled paper, make the gift a preloved book or toy or have a no-plastic gift policy. One year my son invited so many kids to the park and we really didn’t want over 20 toys (and the packaging!) to add to our home. Luckily he felt the same way and was more than happy to say ‘no gifts, donation if you prefer’ on the invites. He felt very proud donating over $250 to NAPCAN, one of our favourite charities.

♥ Set up boxes or bins, clearly labelled for recycling for easy clean up.

♥ Make paper chains. Use old wrapping paper, cards, brown paper or homemade artworks. Masking tape is best as its recyclable.

♥ Get creative with party decorations. Use things like candles, flowers, leaves, gumnuts, pebbles, shells, seeds and pods! Popcorn garlands and hanging biccies are fun too.

♥  Instead of using disposable plastic tablecloths and banners, invest in a gorgeous fabric party decorations that can be reused over and over again at every celebration! Check out these hundreds of ideas at Etsy – you can even find people who will make customised products for you.

♥ Check the local op-shop for colourful platters, plates and cups. It’s not hard to wash them up and you can store them in a box to be used again and again.

♥ If you want to use disposable party-ware, check out this range  that is all natural and compostable. You could even use washed banana leaves as plates – what fun for a jungle themed party!

♥ Food covers are better options than using cling wrap (gosh we used to go through a lot of that stuff for parties!)

♥ Try and cater most of the party yourself. Buying individual portions of food uses lots of packaging and it’s usually more expensive.

♥ Face-paint can be really toxic. My daughter always breaks out in a terrible rash if she gets her face painted! Choose a natural face paint like No Nasties Nevada.

♥ Instead of plastic party bags, use paper bags, fabric bags, noodle boxes, paper doilies, pot plants or even paper cups! Check out my healthier party bag ideas here.

 

For your next birthday party, spare a thought for the environment and see if you can make even one small change. Trust me, it makes you feel good to know you are doing you’re little bit!

Hello everyone. My name is Melanie and I am the mum to three special kiddies Connor aged 7, Bella aged 9 and Mackenzie nearly 11. Our family has lived in Singleton, NSW for 7 years. 

Some of my favourite hobbies are scrapbooking family photos and Zumba classes. Reading, listening to music, yoga, meditation, inspirational quotes in various forms, collecting crystals, using essential oils daily and sharing my time with others who inspire me, are the special things I do to make me, me.

So, what exactly are food additives?

Food additives are preservatives, flavours, colours, flavour enhancers, anti-caking agents, antioxidants, stabilizers and the like that product manufacturers add to food to alter it’s shelf life, appearance, consistency or taste. These are mostly artificial with those that are derived from natural sources often from questionable sources such as wood pulp or human hair.

What problems do food additives cause?

Food additives can cause a large range of health effects such as:

Migraines, behavioural problems, hypersensitivity, skin irritations, behaviour and learning problems, worsened asthma, nettle rash or hives, DNA damage, depression, fatigue, headache, insomnia, allergic and supersensitive reactions, gastrointestinal ailments, eczema, dermatitis, inattention, irritability, neurological problems, restlessness, sleep disturbance, aggressive behaviour, hyperactivity or head banging. These reactions vary between additives. Some additives have links to cancer, are prohibited in foods for infants and may damage DNS cells.

Does everyone have to avoid additives?

People choose to avoid food additives for various reasons. All of my three kiddies have different sensitivities to food additives which was how our journey began. As my knowledge and experience has grown, it is my belief that we can all benefit from removing food additives from our diet. Our nation’s health and well-being is on the decline and I believe that food additives are playing a major role in this. I live by a simple rule: if I cannot pronounce the name of the additives or buy the additive in a shop to use in my cooking then it is not for me.

Is it hard to avoid food additives?

Initially, avoiding food additives can take some extra time, especially when you do the grocery shopping ,but it isn’t difficult. Once you are armed with the tools and knowledge, there is no stopping you! Begin small, changing a few products at a time until your knowledge grows and before you know it, your whole diet will have changed.

My website and books provide information to help you live an additive free life. I present all of my information, research, ideas and recipes is an easy to understand format so you don’t feel bogged down or overloaded. Both of my books come with information on additives as well as recipes and shopping lists of products available to purchase when shopping that are additive free.

What is your best party tip?

It occurred to me that children just love a fun, colourful party, so we should forget the focus on food and put it on having fun! I like to have old-fashioned games like apple bobbing, blind man’s buff and egg and spoon races. Take a look at the games section on the website.

Stickers, tattoos, balloons, small bubble containers, stamps, fairy wands or crowns and small cars are just some of the fun things you can include.

What’s one of your favourite additive free party recipes?

NUT FREE APRICOT AND COCONUT BALLS

INGREDIENTS:

500g organic (sulphur free) dried apricots, chopped and soaked

1 cup organic (sulphur free) coconut

1/3 cup chia seeds

2/3 cup rice flour

2/3 cup orange juice

1/3 cup organic tahini

Extra organic coconut for coating

METHOD:

1.    Add all the ingredients and process until combined.

2.    Roll spoonfuls of the mixture into balls and then roll in extra coconut.

3.    Refrigerate until firm.

Healthy and Eco-friendly Kid’s Party Bags

The party bag. The lolly bag. The loot bag. The bane of parents!

Let’s eat heaps of junk for two hours and…… if you still haven’t had enough, here’s a bag full of sugar and plastic to take home with you.

How did that all happen?

Anyway, it doesn’t have to be like that. You can certainly still participate in the party bag tradition in a much healthier and eco-friendly way. The parents will thank you too.

Okay so here are some of my top tips for Healthy and Eco-friendly Kid’s Party Bags:

 

The bag.

Think outside the square. You don’t have to go and buy plastic bags that end up in landfill. What about…..

Paper bags. Get your kids to decorate and add their friend’s names. Use stickers or stamps in keeping with your theme or just drawings! Fun and personal. You could even put a little eco message ‘recycle me’ on the back! I love these mini wooden dolly pegs too – super cute!

Fabric bags. If you are clever on the Janome, whip up some little cloth drawstring bags – these can be re-used by the kids to store their treasures. If you are not so good at sewing (like me), just cut some circles of fabric, load your goodies in and tie up with a pretty ribbon or string.

Noodle boxes. Again decorated by your child or you can also use this as a craft activity at the party. (Can you see how good delegating is?!)

Paper doilies. Fold large paper doilies up into an envelope or cone shape for the goodies.

Snack pockets. We love these little snack pockets for our lunchboxes, but they also work well for parties! They are 100% cotton and canvas fabric, ethical and eco-friendly. The Natural New Age Girl is in love with the little birdy print! Visit the website here.

Paper cups. Decorate paper drinking cups and add a cute little string handle. Get them from as cheap as 0.29c each from Eco Party Box.

 

The goodies.

Here are some ideas that don’t involve lots of sugar, artificial stuff and cheap plastic. My tip is to not go overboard. A party bag is just a small token to say thanks for coming.

Popcorn Butterflies. I love this cute idea from Collette at Cut out the Crap. Take a look here to see how to do them. This in fact can be the party bag!

Mini boxes of dried fruit. Try to find organic ones as regular dried fruit often contains sulphur dioxide.

Home-made treats. Pop in a biscuit or some chocolate coated nuts (pictured).

Organic, good quality packet snacks. Here are some good ones – Berry Choc Chunk Bars (lots of superfoods) or some organic biscuits and bars from Organics on a Budget.

Organic or additive-free lollies. I don’t serve usually serve lollies at the party, but pop one or two into the party bags. Check out Organics on a Budget for some healthier lollies and chocolates.

Playdough. So easy to make a batch of homemade playdough – colour with some beetroot or spinach for a really natural dough!

Organic seeds. Cute and eco-friendly! Find them at Gardening 4 Kids. They have lots of other cool things as well.

Colouring-in pages. Print off some colouring in pages to suit your theme, roll them up and tie with string.

Or do something different to a party bag and try:

Lucky Dip. Wrap small toys in some tissue paper or recycled gift wrap and put in a box!

Little Golden Books. You can buy these so cheaply and you can inscribe in the cover – “Thanks for coming to my party, Love xx”. They also make an awesome idea instead of a birthday card, but I digress.

Craft. Get the kids to make something crafty at the party for their take-home gift.

 

I always think it’s a nice idea to include a thank you note in the party bag too. It’s old-fashioned, but it teaches kid’s good manners and to focus on the fun time spent with friends, rather than just presents!

 

A tip if you don’t want your child to have a party bag from a party, is to tell them you will swap it for a healthy treat at home.  How else do you handle this?

Healthy Kid's Party Food

 

“When it comes to food at birthday parties, it’s my experience that children are very happy with whatever is served and usually eat it all, starting with the fruit plate! We have to let go of our old expectations and trust our children to appreciate what’s healthy, but fun, food” Mamacino

Have you ever come home from a party and your child is bouncing off the walls, sick and irritable? It’s more than likely all the additives and the sugar-high from ‘traditional’ party foods.

My conscience just won’t let me serve that stuff up to kids anymore. There are so many yummy, healthy things you can make instead. Sure have a treat or two in there if you like, but balance it out with loads of the good stuff.

Okay, so here is my tried and true formula for catering a healthy kid’s party.

KISS – Keep it Simple Sweetheart. Remember my last post.

I serve four different types of food, plus the cake. I put them onto eight smallish serving plates, so it looks impressive. I do a fruit, a vegetable, a savoury and a sweet, plus the cake.

1. Fruit

♥ Passionfruit cups. From Rebecca Mugridge’s new book Happy, Healthy Mums. This is a sneak peek, the book isn’t out yet! Sign up to Bek’s blog to stay updated. All you do is scoop the flesh out of the passionfruit, make a fruit salad, add the passionfruit back in and serve it with some toothpicks. All compostable!

♥ Fruit skewers like these by Hayley at Doing it for the Kids.

 

Apple Snax - Natural New Age Mum

 

♥ Apple Snax. Use some lemon juice to stop the apple browning, top with homemade nut butter and some yummy toppings. You could even make it a fun party activity and let the kids make their own.

♥ Or just do a simple fruit platter like the one pictured up the top. Fruit in season is cheap and delicious!

 

2. Vegetables

♥ I am deadly serious. Serve up some cherry tomatoes, baby qukes, baby carrots, snow peas and strips of capsicum with my yummy dip. Serve the dip in half a capsicum for a bit of fun.

♥ Easy Green Herb and Garlic Dip

 

♥  Kale chips. You can try!

 

3. Savoury

♥  Zucchini slice. Serve it cut into squares with half a cherry tomato on top.

♥  Vegie Smuggler’s amazing Cheese Puffs. My kids love these and we have been making them with lots of different vegetables like carrot and broccoli. Yum.

♥ Chicken drumsticks or wings, baked with a sticky organic tamari and honey glaze. Sprinkle with sesame seeds and chopped spring onion.

 

Polenta crumbed chicken nuggets

 

♥ Chicken nuggets. No, not the ones from a packet! Try some of my homemade, super healthy recipes. Serve with some easy home-made tomato sauce.

♥ Salad wraps. Choose a good quality wrap like Sorj or Mountain bread, add some boiled egg, organic chicken or organic ham, loads of salad, roll up and slice into small rounds. They looks so pretty.

♥ Popcorn. Buy the organic variety and pop it yourself in a popcorn machine or in a pan with a little coconut oil. Top with a healthy salt or some Vital Veggie Power. Do not buy the microwave popcorn – it’s horrid stuff.

♥ Sushi and rice paper rolls. You can buy these if you choose carefully!

♥ Kids love meatballs! Try my lamb meatballs or make some chicken or beef ones with loads of vegetables. Bake in the oven to make it quicker.

♥ Cyndi O’Meara’s healthy, vegetarian sausage rolls have pretty much gained legend status. The kids will never know they are healthy. If you haven’t tried them, you must! Get the recipe.

Repeat after me…….. Just say no to the cheerio! 😉

4. Sweet

♥ Thermomix Sorbet. If you are lucky enough to have thermomix, fresh fruit sorbet is pretty darn impressive. Use honey or rapadura sugar.

 

 5. Cake

♥  Too busy too cook? Add in a few healthy packet snacks. Check out this post to find the best.

♥ You can easily make many of these ideas ahead of time and freeze.

 

Okay, who’s still with me? Let’s talk drinks.

♥ Water. Get a huge container of water and ice and jazz it up.

♥ Raspberry Lemonade from Jo at Quirky Cooking. Super healthy and easy to make. Doesn’t it look the bomb!

♥ Make freshly squeezed juice, smoothies or milkshakes. Set up your juicer/blender/thermomix on a table and you can make them to order like a juice bar!

♥ Alisha from Naughty Naturopath Mum has little kids and she uses plain Cocobella coconut water in poppers at her parties. She also told me to google this crazy idea.

♥ Make a watermelon your drink dispenser! See how to do it at Brit + Co. Fill it with a healthy watermelon drink and just watch the kids go nuts for it!

I could go on, but I won’t! I hope this has given you some things to think about and try for your next kid’s party.

Tips for a Stress-Free Kid’s Party

Does the thought of hosting a kid’s birthday party at your house make you break out in a cold sweat?

 

No wonder so many people choose the option of birthday parties held at fast food places and play centres!

Personally, I have never done that because I am a cheap-skate and I think they are over-priced. 😉

Not to brag or anything, but I have hosted around 25 kid’s parties in some form or other, over the years.

What was I thinking?

No, really, we have such fond memories of all the crazy themes (Star Wars, Monsters, Bike, Garden, Fairy, Princess, Pirate, Gross, Disco to name a few), the great kids and the FUN! All on a budget and (mostly) healthy.

Well, you are in luck today. It’s Tip Tuesday and I am sharing my top tips on how to host a kid’s birthday party without the stress.

Ready?

* KISS. Keep it simple, sweetheart. Unless you are a party planning goddess and get off on this stuff, keep it really basic. The kids won’t notice. Promise.

* I like having the party on a different day to my child’s actual birthday. The times we have had it on the same day, I haven’t had time to properly enjoy the day and my child.

* Host a morning or afternoon tea. Less catering required.

* Serve finger food. No plates required and less washing up.

* Keep the food very simple. You don’t need to create gourmet masterpieces (it will be lost on a three-year old anyway). See how to make a simple, healthy birthday cake here. More food ideas in tomorrow’s blog post!

* Limit guests. You do not need to invite the whole class. Choose the number of guests to coincide with the child’s age as a rough guide.

* If you have family invited, get them to bring a plate.

* Always make it easy for guests to RSVP. Include mobile/phone/email or even a tear off slip on the invite. Chase them up if need be.

* Plan well ahead of time. Shop ahead for non-perishables – this makes it easy on the budget too.

* Don’t overcater. In my experience, younger kids will not eat loads. Four different items and cake is plenty. KISS remember?

* Set up a tea and coffee station so parents can help themselves.

* Don’t make special food for the adults. They will eat the kid’s food anyway. Many do not even eat anything.

* Keep the entertainment cheap and simple. You don’t need to hire a jumping castle or entertainers. Choose 3-4 old fashioned games to play. In fact one of the most popular games we had at a teddy bear’s picnic theme was all the kids holding onto the edges of a picnic rug and tossing teddies into the air! Another fun idea was our water fight party – everyone bought a water gun and that was the entertainment sorted!

* Put hubby or older child to work and make them in charge of games. You can even load them up with some organic lollipops and get the kids to give chase!

* Ask parents to stay if the kids are very young. Supervising toddlers en masse is not easy!

* Ask the parents staying to help you out. Usually at least one will ask what they can do. Don’t be a martyr – delegate!

* Set up bins and recycling bins close by so clean up is easy.

* Take the whole shebang to the park! If you have a fabulous local park with lots of good play equipment, you are set. One of the best parties we ever had was ‘pancakes in the park’. I just made up a big pancake mix at home and we cooked them on the bbqs. Put out lots of yummy toppings and fruit and get the kids to help themselves.

* Make food ahead of time and freeze. The birthday cake and muffins will freeze really well.

* For older kids, a home-made pizza night with movie and a sleepover is often more fun than a full-on party.

* A simple craft activity is fun for older kids and they can take home their masterpiece as the party favour. Check out the Veggie Smugglers ‘Craft for Non-Crafty Parents‘ for ideas.

* Don’t compare yourself to other mums, other parties or Pinterest. Do your own thing.

* Limit the party time to two hours. It will go fast, trust me.

* Remember the candles and matches and don’t forget to charge up the camera and video recorder. Ask a friend or family member to be in charge of the photography.

* Relax and don’t sweat the small stuff. Let go of your ideas of perfection and just enjoy the time with your child and their friends. They won’t notice that the cake is a little wonky or you forgot the balloons.

* Don’t forget your sense of humour!

Making a home-made cake means you can control what’s in it, it won’t cost you an arm and a leg and has the special ingredient – mum love! ♥

Check out these six fabulous ideas for healthier birthday cakes. I personally think they are yummier than the sweet, sickly rich cakes.

If you want a bigger cake, double the recipe and stack two on top of each other or bake in a large rectangular pan.

♥ Healthier Icing

Icing or frosting usually is a heap of icing sugar! Tasty but not so healthy! Here are some other options that still taste great but are a bit healthier.

Gooey Chocolate Icing

Raw Chocolate Glaze

Coconut Cream Whip

Paleo Chocolate Frosting

Chocolate Avocado Mousse

Cream cheese with honey

Fresh organic cream

Marscapone cheese mixed with pureed berries and honey to taste

Avoid food colouring if you can – that’s where all the nasty additives hide.  Source some natural food colourings like Hoppers just make your own natural food colourings.

To make an easy chocolate icing, add a couple of spoons of raw cacao,  Superfoods for Kidz Berry Choc Chunk powder or melted dark chocolate and mix with cream, cream cheese or whipped coconut cream.

   

♥ Healthier Cake Decorations

Fresh fruit is always a winner. Use cookie cutters to make fun shapes.

Hoppers make a range of natural sprinkles that are free from artificial colours and flavours

Chopped nuts

Fresh flowers

Bliss balls

Natural Confectionery Company lollies (still sugar but there is no artifical stuff)

Organic Times Gems (a healthier Smartie)

You can also decorate with non-edible items like toys (just take them off before you eat!). A couple of my kid’s favourite cakes have been a dolly varden, a cake with Bob the Builder toy and bulldozer and a cake with a Steve Irwin doll, plastic trees and a few Natural Confectionery Company crocodiles!

Sparklers are not so great as the metal flakes they give off are not safe to ingest. If you want to use birthday candles, beeswax are the safest option.
