Easy Muesli Bars

This recipe is ridiculously easy to make. Just throw everything in a bowl, mix and bake!

As much as I love cooking, keeping up a constant supply of home-made real food for the family can be quite time-consuming.

So the easier the recipe, the more chance it is that it will be on high rotation in our house. I always make double batches and freeze too.

You can even get the kids making this one it’s so simple and fuss-free.

Of course you get the added benefits of it being much cheaper than buying muesli bars, there is zero packaging and you know exactly what’s in your food.

Easy Muesli Bars

Vital Stats: Wheat free, dairy free, nut free, vegetarian

This is what you need:

3 cups muesli

1/2 cup sultanas

2 bananas

1 egg

1 tablespoon coconut oil

 

This is how you do it:

Preheat the oven to 180ºc. Line a slice tin with non-toxic baking paper.

Mash the banana and whisk in the egg and coconut oil. Add the muesli and mix well.

Smooth into your slice tin with a spatula or the back of a wet spoon.

Bake for 20 minutes or until nice and firm.

Let cool before you slice with a bread knife.

 

Hot tips:

We make up our own muesli but any good quality muesli is okay. Ideally, try to get one that’s organic and without sulphur dioxide in the dried fruit.

If you want to make these for lunchboxes, just make sure your muesli has no nuts.  Use seeds, coconut and fruit instead.

Very good vegetable soup with wheat free damper

This is our family’s very favourite vegetable soup to have at winter time.

The flavours are so yummy and the addition of a little barley helps fill us up. The secret ingredient is the tamari and the seaweed!

Serve it with this super easy wheat-free damper, and you have an easy, nutritious meal for the whole family. Enjoy.

Very Good Vegetable Soup

Vital Stats: Dairy free, vegetarian, egg free, nut free

 

So this is what you need:

Use organic produce where you can!

1 onion

3 cloves of garlic

1/2 tablespoon oil (macadamia or coconut)

1 large zucchini (200g)

2 large carrots, scrubbed lightly

3-4 sticks of celery (150g)

200g pumpkin, peeled

1 medium potato, peeled (150g)

150g broccoli

3 bay leaves

2 tablespoons organic tamari

1 tablespoon organic tomato paste

1/2 cup barley

2 tablespoons seaweed flakes

2 x 400g cans Spiral organic diced tomatoes (their cans are BPA free)*

1 1/2 litres filtered water

6 tablespoons thermomix vege stock (or organic vege stock cubes)

gomasio* to serve

 

So, this is how you do it:

Chop all of the veges into a smallish dice (or use your thermomix on speed 5 for 3-4 seconds, working in batches). Cook off the onion and garlic with the oil in a large stock pot until just soft.

Chuck in all of the other ingredients. Bring to the boil and then cut it back to a gentle simmer. Cook for about 45 minutes to 1 hour or until all the veges and barley are soft. Remove the bay leaves. If your vege pieces are a little large, you can use a potato masher and gently mash the soup to get it to a nicer consistency.

Spoon into bowls. Sprinkle with the gomasio. Eat.

Wheat-Free Damper

Vital Stats: Wheat free, egg free, nut free

So, this is what you need:

1 cup wholemeal organic spelt flour

1/3 cup potato flour

1/3 cup brown rice flour

1/3 cup buckwheat flour

2 teaspoons baking powder

1 teaspoon xanthan gum

1 tablespoon dried garlic powder

1 tablespoon dried onion flakes

1 cup organic greek yoghurt

So, this is how you do it:

Mix the dry ingredients thoroughly and then stir in the yoghurt. Use a little water if you need to. Knead very lightly and then form into a loaf shape. You can spritz with water and sprinkle some seeds on top if you want.

Place on a baking paper lined tray. Bake in a moderate oven, 180 degrees celsius for 20-30 minutes or until it sounds hollow when tapped on the bottom.

Cool slightly. Cut into generous slices. Eat.

Really Healthy ANZAC Biccies

These are a healthier version of everyone’s favourite Australian biscuit.

We have made this recipe numerous times now – it’s a winner.

Of course, I tweak, tweak and tweak recipes, so mine is a little different to the original recipe I found over at Teresa Cutter’s website. I absolutely love Teresa’s recipes – she makes really great healthy sweet treats. There is also a gluten-free and paleo friendly option for this biscuit on her site.

 

Really Healthy ANZAC Biccies

Vital Stats: egg free, dairy free, wheat free, vegan, vegetarian

So this is what you need:

1 cup almond meal

1 cup organic rolled oats

1 cup organic coconut shredded

1/2 cup rapadura sugar

1 teaspoon cinnamon

1/4 cup coconut oil

2 tablespoons apple juice concentrate

1/2 teaspoon bicarb soda

1 tablespoon water

 

This is how you do it:

Preheat the oven to 180ºC. Line a baking sheet with non-toxic baking paper.

In a mixing bowl, throw your almond meal, coconut, rapadura, cinnamon and the oats. Stir well.

Fling the coconut oil and the apple juice concentrate into a small saucepan and stir over a low heat.

Combine the bicarb and water, then add to the oil mix – it will froth up like a science experiment. Get the kids to watch for some cool mum points.

Add the frothy mix to your dry mix and combine it well. Add a little water if it’s too crumbly.

With wet hands, shape small balls of the dough and press together firmly.

I got about 15 biscuits from the mix, but it will depend on how much you sample as you go. 😉

Whack them onto the baking sheet.

Bake for 15-20 minutes, checking on them so they don’t go black and crispy.

Cool down on a wire rack and then eat.

These biccies will freeze well and keep in an airtight container for a week or so (they won’t last that long, because they are sooo yummy!)
